Sometimes your iPhone camera will focus on the wrong object, which results in a blurry video. Once you have begun recording, try tapping on your phone screen - this will bring your picture back into focus.

It also helps to record your videos with the phone screen facing UP.  This will reduce the amount of light entering into the lens - which the phone camera sometimes wants to focus on.  You can then use the "flip" function to turn your video right side up.
